Ingredients:

  • 500g pumpkin, peeled and grated
  • 1 cup self-raising flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 2 eggs, beaten
  • 1/4 cup milk
  • Vegetable oil for frying
  • Cinnamon sugar for dusting

Instructions:

  1. In a large bowl, combine the grated pumpkin, self-raising flour, cinnamon, salt, and sugar.
  2. In a separate bowl, whisk together the beaten eggs and milk.
  3. Add the egg mixture to the pumpkin mixture and stir until well combined.
  4. Heat some vegetable oil in a large frying pan over medium heat.
  5. Use a tablespoon to drop spoonfuls of the batter into the hot oil, frying in batches.
  6. Fry the fritters until they are golden brown on both sides, turning once, about 2-3 minutes per side.
  7. Remove the fritters from the pan and place them on a paper towel to drain any excess oil.
  8. Dust the fritters with cinnamon sugar and serve warm.
